Have you ever walked in a restaurant and found a living tree full of fruits? And have you ever tasted a menu based on what you can freshly pick from the crops directly beside the counter?

During Dutch Design Week 2015 Bulbo teamed up with acclaimed Dutch designer Piet Hein Eek to put together an exhibition where Bulbo hacked PHE furniture for an indoor plant invasion.

In addition, Bulbo had the opportunity to make the Piet Hein Eek restaurant into an luscious indoor garden. Food from the surrounding plants and trees (illuminated by Bulbo LED grow lights) was plucked and served to dinner guests in real time. A chandelier of Cynara lights served as the centerpiece of the evening, under which a stunning fig tree stood, sharing its fruits for the serving of a deliciously fresh meal by chef de cuisine Martin. The reality of eating your surroundings made for a magical plant filled evening.

Here few recipes that chef Martin unveiled to us!

Bulbo at Piet Hein Eek

Figs drowned in Sherry. Soak the figs in a mix of Pedro Ximénez sherry, with vanilla, star anise and brown sugar for few hours. The skin will get soft and the flesh will get a sweet and good smelling taste. Thicken the liquid part to get a glaze. Put two half of figs in cup and top with the icing. To be served with cheese and raw vegetables.

Spicy fig jam. Remove the soft pulp of the fig and mix it with Porto and 5 Chinese spices. Reduce it to jam. It will gel a nice spicy touch and a lovely Porto reminiscence. To be served with cheese, ham and bread.

Fig delight. Prepare a chocolate mousse in a glass and cover it with a layer of softened butter with Scotch. Put in the freezer for a couple of hours. Remove from the freezer and top with two slices of figs drowned with sherry. Serve at room temperature with some crunchy chocolate chips on top.
